Yaguana: A Refreshing Ecuadorian Beverage to Savor in Cuenca
During my recent visit to Cuenca, I finally tasted yaguana. Despite visiting the city for over 40 years, which is what inspired my blog post to help readers plan the best trip from Quito to Cuenca, this was my first encounter with this delightful beverage. Enjoying yaguana during the Fiestas de Cuenca was a refreshing experience.

What Is Yaguana?
Yaguana is a traditional beverage from Paute, a canton in Azuay province. Made from fruits and aromatic herbs, it has been part of the local identity for over 35 years. Its thick texture and vibrant fuchsia color make it appealing to all ages.
Ingredients of Yaguana
The main ingredients include pineapple, babaco, cooked rice, sweet pepper, clove, cinnamon, ataco, ishpingo, and naranjilla. Ataco and ishpingo are native plants that contribute to its unique flavor and color. This combination results in a nutritious drink rich in vitamins and minerals.
How to Prepare Yaguana
Preparation involves creating a syrup by boiling the fruits with spices. After infusing the mixture, it’s strained and mixed with natural colorants like ataco. The beverage is then cooled and served cold, making it perfect for festive occasions.

Chigüil or chibil, (not the same as humita and tamal), is more than just a dish; it’s a taste of Ecuador’s rich culinary heritage.
