Ecuador offers a wealth of traditional dishes, with chigüil or chibil standing out as a must-try. This delicious treat, made from cornmeal and cheese, is a beloved street food from Guaranda, and called chigüil, whereas in Azuay and Cañar it is called chibil. The dish is especially popular during Semana Santa and Carnival but can be enjoyed year-round. We recently sampled it at Quito’s La Hueca Fest, a vibrant street food festival featuring cuisine from Guaranda as well as other provinces and regions of the country.

How to Prepare Chigüil

To make chigüil, start with cornmeal, pork lard, and fresh cheese. Mix the ingredients until well combined. Then, wrap the mixture in huicundo or achira leaves and steam until cooked through. It’s a simple yet satisfying dish, perfect for festive occasions.
