Tripa mishqui is a beloved street food in Ecuador, particularly popular in the highland regions. I was not sure if at some point during my childhood I tasted it, but I had no memories, so I decided to try it again recently. This unique dish, featuring grilled cow, pork, or lamb intestines, offers a flavorful experience that captures the essence of Ecuadorian cuisine. In our case we went to a restaurant in El Patio, Cumbaya, called la Triperia, so they were focused only on tripa in 5 different flavors. I chose the mapahuira one and it was really tasty.

The Taste of Tripa Mishqui

Tripa mishqui is known for its rich, smoky flavor, achieved by grilling the intestines over hot coals. The intestines are seasoned with a blend of spices, giving them a distinctive taste. They are usually served with corn (like mote), salad, potatoes, and Ecuadorian aji, creating a balanced and satisfying meal. I had mine with mote and potatoes with a sauce on top.

How to Prepare Tripa Mishqui

Preparing tripa mishqui involves cleaning the intestines thoroughly before marinating them with spices. They are then grilled until crispy and cut into small pieces.
