Cariucho comes from the Kichwa words “kari” (man) and “uchu” (ají), meaning “spicy sauce for men.”
This name reflects the bold, spicy flavor of the dish.
The main ingredients—potatoes, peanuts, and chili—are native to the Andes or highlands of Ecuador, thus being a traditional dish, you can often find it served in homes and not just restaurants or festivities.


Historians believe people prepared this stew even before the Spanish arrived.
Over time, ingredients like lettuce and hard-boiled egg were added, making it a true criollo dish.
