Ecuadorian food: Caldo de Bolas de Verde
Today I want to share about this less known traditional soup from Ecuador. I am referring to Caldo de bolas de Verde.
Caldo de bolas or sopa de bolas de verde is a traditional soup from the Coastal region in Ecuador. The ingredients are mainly found in this region of the country and include green plantains and yuca.
My aim through this post is to share with you one of the traditional soups of one of our four regions and continue to learn about our diverse gastronomy.

How it’s prepared
This is a soup that has several ingredients and takes some time to prepare, so for the purpose of this blog post, I will focus only on the main ones. Caldo de bolas de Verde is a soup made of plantain dumplings, stuffed with meat and vegetables. Ingredients include plantain, meat, plantains, eggs, cumin, achiote, peanut butter, carrot, cabbage, garlic, tomatoes, and served with broth, corn, and yuca.

According to one food blogger “Getting the flavors right has been the easier part, the hardest part was getting the green plantain balls or dumplings to stay in one piece, they are very fragile and need some care to make sure they don’t break apart while they are cooking.’
Where to eat it
While you can occasionally find this soup in the Highlands or Sierra region of Ecuador, the best one is the one that you will eat in Guayaquil or other cities on the Coast.
